Apricot Squares Recipe From Sue

bakedblog.comThis is a recipe that has been in my family for as long as I can remember. My Grandmother used to make them, then she passed the recipe onto my Mother. My mother used to make them when I was little. Now I make for my kids and husband. And my husband especially loves them. I even make them for him on his birthday, instead of a cake he would rather have Apricot Squares! Somebody usually makes them on the Holidays. Those are the guaranteed times when my husband will get to have them. So the other day when I made them out of the blue, for this post, he was very happy.

Here’s the recipe:

Ingredients:

  • 1 cup sugar
  • 1 1/4 cup flour
  • 3/4 cup butter
  • 1 egg
  • 1 tsp. vanilla
  • 1/4 tsp. salt (optional)
  • 1 1/4 cups coconut
  • 1/2 cup chopped walnuts
  • 12 oz. jar apricot jam.

Directions:

bakedblog.comMix sugar and butter together in mixer, beat in egg, slowly add flour, add vanilla. Beat with mixer until well blended. Once blended add coconut and nuts, mix well . Spread half of batter on bottom of 8X12 pan. Spread with 12 oz. jar of apricot jam. Spread remainder of mixture on top. Cook at 350 degrees for 25-30 minutes. Cool before cutting.
