Banana Cake Recipe, and Banana Phone
For about 4 days straight I have had the Banana Phone song stuck in my head.
It started when we watched the latest episode of DiggNation. I definitely blame DiggNation for this endless ear worm, it just won’t go away. It bloomed from there I was mowing my Mothers lawn, and singing the song, I couldn’t get it out of my head. Then my Aunt had a small BBQ at her place and she asked me to make my Banana Cake and boom I was baking and singing ring ring ring ring, banana phone. My three year old son now has the song memorized, and he keeps singing it. He does the cutest thing though he replaces Banana with anything he wants. First it was a Doughnut phone, and then a Oatmeal phone. If you haven’t had the pleasure of listening to this ear worm song no worries I plan on adding the video at the bottom of this post. I caution you that this song is very, very hard to get out of your head, so viewer beware.
My Banana Cake is very easy to make, and a great summer recipe perfect for BBQ’s or a family get together.
Ingredients:
- 2 1/4 C. Cake Flour
- 1 1/4 C. Sugar
- 1 1/2 C. Mashed Ripe Bananas
- 1/ 2 C. Shortening
- 2 Eggs
- 2 1/2 tsp. Double acting Baking Powder
- 1 1/2. tsp Vanilla Extract
- 1/2 tsp. Baking Soda
- 1/2 tsp. Salt
- 2 Banana Sliced
- Lemon Juice
Whipped Cream Frosting:
- 2 C Heavy Whipping Cream
- 1/4 C. Confectioners Sugar
- 1/8 tsp. salt
- 1 tsp. vanilla extract
Directions:
Preheat oven to 375 Degrees and Grease two 8-inch round Cake pans. Into one large bowl mix all the ingredients except frosting, banana slices, and lemon juice. With mixer at low speed beat until well combined. Scrap bowl, the beat on high for 5 minutes. Pour batter into bans and bake for 25 minutes or until toothpick comes out clean. Remove the cake from the pans and cool on wired racks. Cool completely before frosting cake. To prepare the frosting take a medium sized bowl and beat all ingredients except Vanilla extract together until stiff peaks form. Fold in Vanilla extract and frosting your cake. Slice two banana’s and pour some lemon juice over the Banana slices and use them in the middle of the cake and as a Garnish on top of the frosting. Keep cake refrigerated until it is time for use.
Banana Lovers beware this cake is very addicting. I often find myself adding more and more Banana slices in between the cake layers and on top. The extra Banana adds a ton of flavor, and the fresh fruit really completes the cake. I am going to try adding some strawberries next time to cake as well.
