Breakfast Week Recipe #2; Stuffed French Toast
French Toast all by itself is a delicious breakfast dish that is fast and easy to make. Stuffed French Toast is just as easy with a couple extra steps, that make it ten
times more delicious.
Ingredients:
- 2 Banana’s
- 1 C. sliced Strawberries
- 1/4 c. finely chopped Pecans
- 1 tsp. Cinnamon
- 2 Large Eggs
- 1/2 c. Milk
- 4-6 slices of Bread
Directions:
Spray non stick cooking spray on your skillet and set it to low heat. In a bowl big enough to place a piece of bread in, crack eggs, add milk, pecans, and cinnamon whisk together. Place a piece of bread into the mix, and cover both sides. Repeat process and place pieces of bread on skillet. Move the heat up to medium and cook 3-5 minutes each side. While they are cooking slice your fresh strawberries and bananas, and set aside. When toast is fully cooked remove from skilled and place strawberries and bananas on one piece of bread. Use as many as you want, and then place the other piece on top. Add desired toppings, and enjoy! This recipe will make about three stuffed French Toast sandwiches.
Strawberries and Bananas are just the beginning of what you can use to stuff your French Toast. I have used softened cream cheese before and added nuts and fruit to
the mix and used that as my stuffing. Any type of berry is delicious on this breakfast treat.
Toppings can range from powdered sugar, pancake syrup, or even whip cream. let your creativity and your taste buds guide you when making Stuffed French Toast for Breakfast, and you can’t go wrong.
Special note: I added the pecans to the egg, milk mix because it coats them and they stick easier to the bread. However not very many stick to the bread as you coat it. What I did was coat it then using a slotted spoon removed some of the pecans and added them on top of the bread while it was cooking.
Enjoy this tasty, easy, and creative Breakfast dish any time of the day!
