Breakfast Week Recipe #3; Strawberry Muffins
Muffins are great for breakfast, they easy to make, and good for on the go. If you have a hectic morning schedule and don’t have time to sit down for breakfast, (this is
common in a lot of families,) then you can’t go wrong with this recipe for Strawberry Muffins.
Ingredients:
- 2 C. flour
- 3/4 C. Milk
- 1/2 C. Canola Oil
- 1/2 tsp. salt
- 1 Tbsp. Baking powder
- 1/4 C. Sugar
- 2 eggs
- 1 tsp. vanilla
- 1 1/2 C. diced Strawberries
Directions:
Preheat oven to 400 degrees and grease muffin pan. In a large bowl mix flour, sugar, Baking powder, and salt. In a small bowl beat two eggs, and then whisk in milk, and oil. Add wet to dry and stir until just combined. Fold in strawberries. Fill muffin tins half way and bake for 20-25 minutes.
If you are a family on the go, then you can make this recipe the night before and have your muffins all ready to go in the morning. Muffins are great for breakfast, and packing them full of fruit is an easy way to help your kids get their daily servings. There is such an amazing variety of muffins you can make that it is impossible to list them all. Some of my favorite are blueberry, strawberry and banana, banana nut (I have a recipe for healthy banana nut muffins,) and chocolate chip. Okay so that last one isn’t going to help anyone with fruit, but hey everyone needs a little chocolate now and then.
Weather you are eating them for breakfast, or packing them in you kids lunches for a snack with their meal, this recipe for Strawberry muffins make for an easy, and classic breakfast.
By the way the recipe card is back, it is a little different and will probably change again, but this will do for now.
