Breakfast Week Recipe #4; Loaded Breakfast Casserole
I wanted something hearty this morning, something that just was filled to the brim with breakfast deliciousness. I couldn’t think of a better dish then this one. It has everything you might come across on a regular breakfast menu. There are eggs, bacon, and potatoes. If I had sausage that would have been thrown in as well. The Loaded Breakfast Casserole has it all.
Ingredients:
- 10 strips of bacon
- 6 eggs
- 2 1/2 C. Diced Potatoes
- 3 Tbsp. Butter
- 1/2 c. Minced Onion
- 1/4 tsp. Minced Garlic
- salt and pepper to taste
- 1/2 C. Shredded Cheese
Directions:
Preheat oven to 400 degrees. In a skillet on medium heat cook your bacon. While bacon is cooking peel and dice potatoes, and set aside. Finely chop an onion, very finely, and set that aside as well. After all the bacon is done cooking remove and set aside. Saute the onion and garlic in the same pan with the bacon grease. When the onions have cooked well enough add the potatoes, and the butter to the skillet. While the potatoes are frying chop up your bacon into bits. Cook potatoes about 10 minutes and then strain them well, place back in the skillet and add bacon. Crack all 6 eggs into a bowl and whisk add salt and pepper to the eggs. Pour eggs over potatoes and bacon and set in the oven to cook for 15- 20 minutes. When the egg looks done remove and sprinkle 1/2 c. Shredded cheese over the top place back in the oven for 5 minutes. Remove skillet from oven and serve.
This is a one dish meal which makes it fairly simple. It does take a bit of time so make sure you get up early enough to cook the whole thing. This isn’t a very healthy breakfast dish, but that doesn’t matter to me right now, what matter is the wonderful taste this dish has. It is a full breakfast all wrapped up in one pan, and like I said if I had sausage that would have been thrown in as well. This dish is definitely hearty and filling, and you won’t be leaving home feeling hungry.
There are a ton of things you could add to this dish like the sausage, green pepper, tomatoes, or whatever your breakfast loving heart desired. I hope you enjoy this dish as much as my family does, and as always you can print it out on a neat recipe card.
