Pumpkin Muffin Recipe

Pumpkin MuffinsIt is Fall, and my favorite time for baking!

Fall brings cooler temps, more holidays, and tons of family get togethers. It also brings out the baker in me, I love nothing more then to open the windows to the cooler air, stand back with some warm apple cider and preheat the oven.

Today I bring you one of my favorites, Pumpkin Muffins. This recipe makes a lot of muffins and is great for a family get together or a holiday party.

Recipe:

3 1/2  C. Flour

3 C. Sugar

2 Tsp. Baking SodaPumpkin Muffins 2

1 1/2 Tsp. Cinnamon

1 Tsp. Nutmeg

4 Eggs Beaten

1 C. Vegetable Oil

2/3 C. Water

2 C. Pumpkin ( fresh or canned)

1 1/2 Tsp. SaltPumpkin

Directions:

Preheat oven to 350 Degrees. Sift together Flour, sugar, baking soda, cinnamon, nutmeg, and salt in a large bowl. In a medium bowl combine eggs, water, oil, and pumpkin. Mix well.  Add the wet to the dry and mix well. Pour into greased muffin pan or use liners and fill half way.  Bake for 20 minutes or until toothpick inserted into the center of the muffins comes out clean.

When fully cooled these muffins are great topped with powdered sugar. They are also delicious sliced and served with apple butter on them.

  4. Since you bake I thought I would ask if you have a recipe. I’m looking for a white chocolate pound cake made with ricotta cheese. Any help? Also, I see you like pumpkin.   6. Thanks I will have to try that recipe. Have you seen the cutest bear cake pans yet? I will use them to make a bear cake for one of my clients in a Neonatal unit.

  8. What gorgeous color muffins. Being from the UK I have never tried pumpkin pie - I don’t like the idea of it and the recipes seem too sweet for my taste but i think I’ll give these a go next time the pumpkins come into the stores.
